Cinnamon Ice Cream

I mentioned cinnamon ice cream would be a great pairing for the apple pie I just made. Oh, and it was! I have posted this cinnamon ice cream recipe before, but I did not include pictures=( And to be completely honest, I didn't take any better ones this time around either. I can't figure out how to photograph ice cream! If anyone has any pointers, It'd be greatly appreciated! I'm not very good at food photography as it is. I'm not patient enough to get a good photo of my food because I'm too excited to try it!


I've always wanted to make ice cream sandwiches! This incidentally did not make that good of an ice cream sandwich, if I'm being honest. The cookie was way too hard and the ice cream spilled all out the sides. Also, it was hard to detect the gingerbread flavor once it got cold=/

But... add this to a slice of apple pie or have it on it's own! I love how quick this recipe is and how little involvement it has. It's a good solid recipe.

Cinnamon Ice Cream
2 cups heavy cream
1 cup milk
1 cup sugar
1 tsp vanilla
3 teaspoons cinnamon (I put more in hehe)

Combine heavy cream and sugar then stir in milk. Add in vanilla and cinnamon. Pour mixture into you ice cream maker.

SIMPLE!

With my recent motivation to figure what kind of food allergies I have, I've been trying to avoid certain foods. As of late, it has been wheat. Avoiding wheat takes a lot out of your diet. So this has lead me to compensate in other areas. Namely ice cream. Dairy Queen blizzards to be specific. After having a week's worth of blizzards, my wallets running low, (and surprisingly I never get tired of having them!) But, being the baker I am, I began to guilt myself as I knew I could be making these at home.


My favorite blizzard has to be the regular Oreo. They also have an Oreo cookie jar flavor, which is Oreo bits AND cookie dough bits. So actually that might be
my favorite. Another good one is their caramel turtle pecan. So good. But I wanted to recreate these at home since I'm in love with my ice cream maker. First up: Oreo! Duhhhhh.


I found an eggless vanilla ice cream recipe (I am so lazy) and then added largely chopped Oreos in at the end. Two things: 1) I should have made a custard ba
se (see next paragraph), 2) I should have made some smaller pieces as well instead of quarter pieces. After seeing the large pieces in it, I wanted to start crushing some up for smaller bits, but my dad stopped me. I don't know why I decided to cater to him, but he wanted the pieces big enough so he could pick them out. RUDE.


I always love eating the ice cream while it's churning. I think that's when it tastes best! For this specific ice cream, it gave me an indicator of what my ice cream would taste like. In this case, chilled whipped cream. I joke not. It was a big batch of fluffy slightly chilled whipped cream. It was so bizarre! I realized that by not making a custard base I would be missing out on the traditional taste, but really, this was intense whipped cream. My mom is a whipped cream fanatic and my dad, surprisingly, loved it as well. But I just couldn't get over the fact that it was "whipped" cream and not "ice" cream.


However.... after proper freezing, this ice cream tasted just fine and I demolished it quickly! I made the Oreo pieces pretty big and I'd have to say this was a huge success. I quite liked this and no need to spend money on blizzards every night! And with the left over Oreos I hope to have another treat to share with you guys!

Oreo Cookies and Cream Ice Cream

1 c whole milk
2 c heavy cream
1/2 c sugar
1 1/2 tsp vanilla
Oreos (I think the amount is very subjective)

Whisk together milk and sugar until sugar is dissolved. Pour on heavy cream and vanilla. Add to ice cream maker and churn according to manufacturers directions.

Add in Oreo pieces when the churning is done and enjoy immediately for soft serve, or freeze.

Strawberry Banana Smoothie Ice Cream

If you noticed that in the title I referred to this as smoothie ice cream, you're not mistaken. I have managed to put a smoothie into ice cream form. But if a smoothie is in ice cream form, then is it still a smoothie? Sure. Just smoothie ice cream... You'll just have to try this to figure it out I guess!

And of course this was made in my lovely ice cream maker. It is one of the greatest gifts I have ever received! I can rave about it more, but I'm sure it's not necessary.


I did make a few changes in the recipe due to lack of ingredients and personal preference. First off, I completely changed the name by addin
g in bananas. It was just a strawberry ice cream recipe I used, but I subbed in some bananas since they were about to go bad. Plus, I love strawberry banana smoothies and I hoped it would taste as good. (Turns out it does!) Second, I didn't nearly have enough sugar. Gasp! Like we barely had 3/4 cup. So I did as much white sugar as possible and then used brown sugar. It's a little off the beaten track, but whatev.


My notes are made in red. But if you want to follow the original, just ignore them!


Fresh Strawberry Banana Ice Cream

From HERE. Based on a recipe from Gourmet, August 2009


1 pound of strawberries, hulled and halved
(In my case, 1/3 pound strawberries and 1 1/2 bananas)
1 ½ cup sugar
(in my case, 3/4 c white sugar & 1/2 c packed brown sugar)
¾ tsp fresh lemon juice

1/8 tsp salt

1 cup heavy cream

1 cup whole milk


In a large bowl, coarsely mash strawberries and bananas with lemon juice, sugar and salt using a potato masher.

Let stand, stirring and mashing occasionally, 10 minutes.
Using a ladle, transfer half of the strawberry banana mixture to blender along with cream and milk and puree till smooth. Return strawberry banana cream to bowl with rest of strawberries and chill till cold, 3-6 hours. (I didn't do this =P)

Freeze mixture in ice cream maker according to maker’s directions.

Transfer to an airtight container and place in the back of the freezer to firm up, at least 1 hour.
Makes 1.5 quarts. Keeps in freezer up to 1 week.

There's some recipes that float in your mind for days. Some recipes you've book marked for weeks. Some recipes you've told yourself you're going to make for months. And some recipes you've thought about for all of five minutes and then you make it. This was probably a recipe a saw three minutes before I decided that I needed to make it. Now.

Its been a while since I've made ice cream this summer and I was craving it. As much as I LOVE Cold Stone (And trust me I do! They have like these crazy ice cream cupcakes I am dying to try!) and could have easily driven to it, I wasn't about to pay $4.50 for small size with two mix-ins=/ Let me rephrase: My mom wouldn't lend me any money so I'd have to use my own. Gasp. But, she would give me money to stop at Giant Eagle (the local supermarket) to pick up heavy cream!

Alright, so after a quick ingredient pickup I returned home to make this super easy cinnamon ice cream. But, oh wait, we don't have enough cinnamon..... Seriously? Yes. So it's almost 9, my show is about to come on (Last Comic Standing), and I didn't want to make another trip down to the store. That's what neighbor's are for right? My neighbor Beth is a life saver. She always has everything I need. Okay, now I've got my cinnamon and I'm ready to go. Now add the three tablespoons, and then... Oh wait. That seems like an awful large amount of cinnamon in that bowl. Maybe I should double check the--- AHHH! three TEAspoons! Ok ok. Ok ok ok ok. Thank goodness cinnamon floats. I can easily just skim it off the top. Ahhh crisis averted. And a little extra cinnamon never hurt anyone!

I dump everything in the ice cream maker (Thank you CSN stores!!!) and start the churning in time to watch my show! Question: Does anybody else absolutely adore the way the ice cream tastes when it's only been churning for like 15 minutes? Like having some spoonfuls while it's churning? This might be wrong, but I hope someone else agrees with me.

Oh, and I forgot to take pictures... YIKES! I always feel like a post is sooo bland without pictures. Sorry=(((

Cinnamon Ice Cream (I can't remember where I found this recipe so I found a similar one, and it lists a custard variation as well, and I'm listing that and what all I can remember)

2 cups heavy cream

1 cup milk

1 cup sugar

1 tsp vanilla

3 teaspoons cinnamon (or more because I dumped a ton in.. whoops!)

I believe you just combine these ingredients and add them to your ice cream maker per the makers directions.

Sometimes I act very mature. I drive myself everywhere. I make calls to colleges to set up appointments. I babysit my cousins. I converse with adults. I don't often do childish things. I act silly sometimes, but I'm not the kind of person to pretend to be stupid, or make stupid jokes (a fart joke here and there has it's place, however). I can't stand when people act childish or purposely do unintelligent things that they may think are funny. I may sound like a serious person, but I consider myself sophisticated. Yet, a lot of my friends think I'm hilarious. That sounded completely narcissistic, I know, but hey, if you got it, flaunt it. I have a sarcastic, sometimes dry, humor that I use often.


I tell you this so you can get to know me a little more. And, to reveal to you that I did something very childish recently that someone wouldn't normally think I would do. I stuffed my face with a ton of ice cream to the point where I had a legit tummy ache. I was like a little kid after Halloween who went on a sugar high and had an upset stomach. It may have been a caffeine high now that I think about it. And at least it was coffee chip ice cream, so that's a little more mature, right?


This ice cream was loved by EVERYONE in my family. Yes, my dad finally indulged in something I made! It went so fast. I couldn't believe how good it was. It's been a while since I've made a custard based ice cream (an egg free one) and I don't feel as though I'm missing out. These fast and easy ice cream recipes have been so satisfying!

Eating ice cream out of fancy glasses is so much cooler than a regular bowl!

Coffee Dark Chocolate Chip Ice Cream

adapted from Just Jenn Recipes

Ingredients:
1 cup milk
2 1/2 tablespoons instant coffee crystals (or 3 Nescafe packets)
3/4 cup sugar
1 1/2 teaspoons vanilla
2 cups heavy cream
roughly chopped dark chocolate bar

Directions:

In a bowl, combine milk, coffee, sugar and vanilla. Stir to dissolve vanilla and add in heavy cream. Pour into ice cream maker using manufacturers instructions.

During the last five minutes, add in the dark chocolate chunks.

I personally love the soft serve way it tastes right out of the ice cream maker, but at this point, place ice cream into plastic container to chill in your freezer.

I write this to you after having taken a pain killer for this gosh darn wisdom teeth recovery. It is brutal business, especially since I didn't take any pain medication until just now, the night of the second day. It was pure hell before then. Anyway.... in the time leading up to the procedure I of course was very concerned over what I would be able/want to eat. (Ironically, I haven't eaten really anything these first two days). I don't like jello and I'm not a big soup person, but that still left me with options. I knew I'd at least want to make myself some good homemade ice cream.

Silly ol' me still has plenty of leftover POM Wonderful juice sitting in her fridge since I won a contest over at Sticky, Gooey, Creamy, Chewy. I figured pomegranate ice cream would be an easy kind to swallow, even though I would have loved to put chocolate chunks in it like Susan did.
First you need to make a syrup from the juice, then add it to your cream mixture. After that, you're good to put it in your maker and enjoy! I've only had a little bit of it so far, but it's really tasty! Especially with a heaping of whipped cream, my fav. Plus, POM juice is sooo good for you. So there's no shame in eating a ton of it!




Pomegranate Ice Cream
from: Sticky, Gooey, Creamy, Chewy

Ingredients:
2 cups bottled POM Wonderful Pomegranate Juice
1 cup sugar
2 teaspoons fresh lemon juice
2 cups heavy cream
1 cup whole milk
3 tablespoons cornstarch
1/8 teaspoon salt

Directions:
Combine pomegranate juice, sugar and lemon juice in a small saucepan over medium-high heat. Stir until sugar has completely dissolved. Bring to a boil, reduce heat and simmer over medium heat for 30-40 minutes, or until juice has reduced to about 1 cup. It should be the consistency of syrup.

Remove from heat and allow to cool for at least 30 minutes. Syrup can be stored in an airtight container in the refrigerator for up to two weeks.

Heat the milk in a saucepan over medium heat to warm it up. In a bowl, whisk the cornstarch and cream together until smooth. Add cream mixture to the saucepan and stir. Heat while stirring until mixture begins to boil.

Remove from heat and continue to stir for a few minutes. Pour the mixture into a bowl and let cool for about 5 minutes, stirring frequently to release the steam. Stir in the pomegranate syrup and salt.

Refrigerate for several hours or overnight, until well chilled.

Once chilled, freeze the mixture in your ice cream maker according to the manufacturer’s instructions.

Freeze until desired firmness is reached.

Makes approximately 1 quart.

So I think this is my 100th post? OMG that's crazayzay! I wish I'd had a better post planned... I'll make up for it later, I promise. At this point I have a bunch of drafts I'm still trying to publish before they get really old!

I FINALLY got around to using my ice cream maker again. It's about time. Now that the weather is (dare I say) sweltering, ice cream is always on my mind.

This ice cream sounds pretty fancy, but it is probably the easiest ice cream to make. EVER. If you want something that seems fancy for only a little work, this recipe has got you covered.

The components: 1st is the hazelnut. For those of you nutella lovers, this is made for you. 2nd is the espresso. Now you've got the coffee fix involved. I used the instant packets, which are so fun to watch dissolve into the mixture! 3rd is the cheesecake. I don't think anything needs to be said about the deliciousness of cheesecake. Nope, nothing.


Overall, I enjoyed trying the flavor of ice cream. It was definitely RICH. Like, I put whipped cream on it, and it was serious overload. But a drizzle of chocolate syrup is a nice touch. Plus, I added white chocolate chips, had to. I'd like to try it not as a cheesecake if I make it again.


Espresso Hazelnut Cheesecake Ice Cream
from Daydreamer Desserts

16 oz cream cheese
1 1/2 cups heavy cream
1 cup granulated sugar
1 1/2 tablespoons instant espresso powder
2 teaspoons vanilla extract
1/4 cup hazelnut spread

In a medium bowl combine the cream cheese, heavy cream, sugar, espresso powder, and vanilla extract.

Begin by beating on low until heavy cream has been incorporated, increase speed to medium-high and continue beating until cream cheese is smooth and creamy.

Transfer mixture to your ice cream maker and follow your manufacturer's instructions.

Approximately 5 minutes before the ice cream is down microwave the hazelnut spread for about 50 seconds at 50% power until it has reached a pouring consistency.

Pour the hazelnut spread into the ice cream maker and as soon as it has swirled through you can turn it off.

Transfer ice cream to a resealable plastic container and freeze for at least 2 hours.

I got my brand new ice cream maker! I was surprised how fast it was shipped to me, actually. It's just taken me a bit to getting around to using it... I'm a busy girl, ya know? Then there's the whole matter of posting about it. But I got around to it!

I definitely knew I wanted to make a vanilla ice cream because it's simple and the best way to tell if the ice cream maker's legit or not. This one was completely legit

The Deni ice cream maker worked wonderfully. I've never used one before, obvi, but this was super easy. It says to let churn for anywhere from 5-30 mins. I think going the full 30 gets you to that ice cream state and not just soupy goodness. 'Cause trust me, even before it's actually ice cream, it tastes HEAVENLY!

I am so thankful to the CSN Stores for giving me this opportunity!
I have always wanted an ice cream maker and everyone in my family is so excited!

We all thought the ice cream was superb! It is so much more cost
effective as well. Not to mention no preservatives or other chemicals. And you can control what you put in it!

The recipe I used was one given in the pamphlet I received with my product. It produced great results. However, I may not return to some of the others because they use a lot of 'light', 'reduced fat', 'skim', or 'egg beater' ingredients. I'm all for the more fat or more natural the better.

I didn't skimp on the vanilla ;)

Nice and thick=)

French Vanilla Ice Cream
Ingredients:
3 eggs
1 cup of sugar

1 1/2 cups milk
2 cups of heavy cream
2 tsp. vanilla

Method:
1. Beat eggs and milk together in a large saucepan.

2. Add sugar and cook over low heat, stirring constantly until thickened (approx. 10 mins).
3. Mixture should coat the spoon.
4. Cool, then add cream and vanilla.
5. Mix well and refrigerate to chill thoroughly.
6. Slowly pour contents into your already spinning ice cream maker.
7. Leave running for about 30 minutes.
8. Allow to freezer in your freezer until desired hardness.

Graham cracker base, homemade vanilla ice cream, chocolate sauce, whipped topping. Missing: Dark chocolate brownie (I didn't get a photo of that one=/)

I Want New Stuff!

That title honestly makes me sound horrible. ButI don't really have all the latest kitchen gadgets or supplies like some people. I have older appliances and kitchen equipment, and for the most part, I'm okay with it.

However, I have been looking around to see whats out there that's new and exciting!

I've seen everything from new kitchen stools, to food processors, to kitchen carts, to new bake ware.

Yet after all these probably more practical items, all I can think about getting is an ice cream maker! After I saw this Deni Ice Cream Maker with a Candy Crusher I got really childish and thought, "gimme gimme gimme!". I've seen so many ice cream recipes out there and felt left out. But no more!


As soon as it's in my possession I will tell you all how good it's been to me=)
Already I'm imagining the ice cream possibilities I'll have with it!
